COTTON CANDY BUTTERCREAM

7. Prepare 2 batches Vanilla Buttercream. Transfer 1½ cups to a medium bowl and reserve for crumb coating the cake.

8. Add the cotton candy flavouring to the buttercream in the bowl of the stand mixer and whip to combine. Transfer 1 cup to a medium bowl. Add 3 to 4 drops soft pink food colouring and use the spatula to mix until fully incorporated.

9. To the bowl of the stand mixer, add 3 to 4 drops sky blue food colouring. Whip on high speed until fully incorporated. Transfer 1 cup blue buttercream to the bowl with the pink buttercream. Reserve the pink and blue buttercream for frosting the cake. Reserve the remaining blue buttercream for stacking and decorating the cake.
